The Applesauce Switcharoo


Many of you probably already know this but I am a quick healthy-tip switch kind of person so I am constantly substituting applesauce for oil in anything and everything. This will save me a step in my Apple Cinnamon Pancakes, Caramel Apple Wheat Pancakes, many Banana Bread and Zucchini Bread recipes, Pumpkin Bread, Cinnamon Streussal Pancakes, basically any baked good that would call for oil. If you are new to this tip and are unsure of what I am talking about, you simple substitute applesauce for oil cup for cup in your baking recipes. This reduces the fat content (if replacing 1 cup of Canola Oil for applesauce) by 218 grams and 1822 calories, plus you're adding in a little fruit with vitamins. So if you had a loaf of zucchini bread that called for 1 cup of oil and you split it into a dozen muffins, that trick alone would save you 152 calories and 18 grams of fat per muffin!   Thank you Shelf Reliance for helping me make more recipes healthier one step at a time.

Wow, I didn't even start thinking about all of the gallons and gallons of applesauce my kids eat in a year. Hmmmm... I wonder how many cases I'll need to buy?

Do cubes of Tomato make you smile? Me too.

At the Opportunity Meeting in Albuquerque last night we got to taste this brand new product. They are so flavorful that I can snack on them right out of the can. Of the 3 new veggies, they were my husband's favorite. In August I did a Meal in Minutes class with a bunch of friends from my church. We were able to make quite a few things that were meals in a mylar bag after mixing SR things together. The one ingredient that we had to left out was the lonesome little tomato dices. I stocked up on cans of diced tomatoes but they are very heavy and take a lot of space on my shelf. I was so thrilled to see Tomato Dices on the list now with the thoughts of all of the meals I will now completely be able to make with dry ingredients. Taco Soup, Mexican Zucchini Soup, Mexican Rice, Salsa, Stews, Chunky Spaghetti Sauce for lasagna, …

Stir Fry- Freeze Dried Style

I just went to a Opportunity Meeting in Albuquerque and got to taste the new veggies and all I can say is wow, wow, wow!!! I have to say I am quite excited about the new line up of vegetables. When we had convention this February, three of the vegetables I had written in that I wish we had were the Freeze Dried Bell Peppers, FD Tomato Dices and FD Zucchini. This announcement for this line up was a prayer answered for me. When living off of food storage, who could go without the warm, toasty, fresh-out-of-the-oven goodness of zucchini bread? I absolutely adore zucchini in my stir fry and a southwestern dish calabasitas (Tomato Dices) and Ratatoulle... okay so I'm kind of a cooking geek, but wow, wow, wow I'm excited. Can't wait to get my first can in, because you better believe I'm breaking these babies right out of the package.

My New Favorite Shelf Reliance Product


I know that more than one person has shed a tear for the discontinued Dehydrated Mixed Bell Peppers that Shelf Reliance has decided to retire December of this year or whenever supplies run out....whichever comes first. Trust me, even many of the consultants have been begging SR to reverse this decision. If you loved them as much as most people, now will be your time to stock up before the last can leaves the shelf. While I too liked the Mixed Bell Peppers, it was husband's least favorite food due to its flavor and texture. They were tiny and flaky so they didn't have as much of a “presence” when it came to skillets. Needless to say, my family will be welcoming these wonderful strips of bell peppery goodness with open arms. I went to an Opportunity Meeting in Albuquerque last night and Jason Budge had these to sample.... I was in Heaven. They nearly melt it your mouth. The fresh aroma fills the air as soon as the can is opened. Then putting it in your mouth and tasting the sweet, then spice-melt-in-your-mouth-goodness is to die for. I think I may have just found a new favorite food. I thought that the Sweet and Sour Pineapple was delicious before, but now it is going to ROCK! Fajitas will be so moist and tender, pizza toppings so crisp and juicy, chili so warm and filling, Lasagna and stir fry....here I COME!!! Speaking of stir fry, I bet these will go great with the new Zucchini that was just released. Yahooey!

A little piece of Heaven....Homemade Flour Tortillas

I'm a New Mexico girl as you all know and I love myself some tortillas. Quesadillas, Breakfast Burritos, Green Chile Beef and Potato Burritos or just plain tortillas.... we eat a lot of these in our family!  I have had trouble finding tortillas that are actually made by hand. I was looking at recipe after recipe and they all said mix with food processor, blender, etc. I wanted a fall back, go to recipe that I could use if we didn't have plugged in appliances. Thanks to LaDonna on allrecipes.com I have a recipe that I love and can make with my very own two hands. I only had to change 1 ingredient amount.


Printable Recipe
Homemade Flour Tortillas
Prep Time: 15 Minutes
Cook Time: 45 Minutes


Ingredients:
4 c all purpose flour                              2 ½ T THRIVE shortening, prepared (or lard)
1 t salt                                                  1 ½ c water
2 t baking powder

1.Whisk the flour, salt, and baking powder together in a mixing bowl. Mix in shortening with your fingers until the flour resembles cornmeal. Add the water and mix until the dough comes together.
2. Place on a lightly floured surface and knead a few minutes until smooth and elastic. Divide the dough into 24 equal pieces and roll each piece into a ball.
3. Preheat a large skillet over medium-high heat. Use a well-floured rolling pin to roll a dough ball into a thin, round tortilla. Place into the hot skillet, and cook until bubbly and golden; flip and continue cooking until golden on the other side. Place the cooked tortilla in a tortilla warmer; continue rolling and cooking remaining dough.

For an easy treat spread a little bit of butter on a hot fresh tortilla and sprinkle it with cinnamon and sugar.  Yummy!

Do you have 2500 diapers on hand?

I know, I know.... most of you are probably going to click right out of this before you even read it. Why would I want to go back to the age of dunking smelly cloth into nasty smelling water and wash it, hang it to dry and do it all over again? Well, have you ever had to make a run to the store because you were out of diapers? Now, have you ever ran out of diapers during an emergency...probably not. Do you want to ever go through the experience of running out of diapers...probably not.


Cloth diapers have come a long way since the time I wore them;) There is no longer a need to fear poking your baby with a pin since they have wonderful velcro, buttons and snappies that make those diapers not only ouchless, but also better-fitted. I love that my skinny-minny daughter has ones that fit on her just perfectly.
I will admit that there are so many options out there that it will make your mind spin so you really just have to jump in and try it. Jillian's Drawer's has a wonderful “test drive” kind of deal that allows you to give a variety of cloth diapers for a full 3 weeks in order to decide which ones fit your needs best. I was so glad I ended up doing this program because I realized I would have bought some that didn't meet my needs. Thanks to this program I found the exact ones that I wanted and the quantity I'd need to use in a day.  I'd highly recommend it if you have a baby or plan on having one in the near future.  Always good to be prepared!

Unfortunate Things to Think About

Its an unfortunate part of preparedness that we'd all prefer not to think of, nevertheless, here it is. After the freeze we had here in February, I decided I never wanted to be caught without menstruation tools. I bought lots of boxes of tampons and had it filling my cabinet under the sink. When I was talking to a friend about how I was frustrated about this, she mentioned the Diva Cupor the "Moon Cup".  It turns out that there are a host of different cup sizes and reusable pads that allow you to be set in that department without having to fill up a ton of space with expensive disposable products. The other great thing is you will be helping the environment too! To think of all of the stuff in the landfill sitting around from me alone...its pretty disgusting. Anyway...hope this rocks your world as much as it did mine. No more having to pack “lite” verses “heavy” materials or worry about leaking. I also thought it would be weird having to use this awkward product, but to be perfectly honest with you, you can't even feel it once its in.  To feel prepared in this department, just Google reusable menstrual pads or cups and you will be able to figure out the size and options that work best for you.

Freeze Dried Raspberries: Ruby Gems of Deliciousness


Raspberries, mmmmmm... raspberries. I confess that my whole married life I've only bought fresh raspberries maybe 4 or 5 times. It frustrates me to no end that I spend $5 on a little carton of berries that I only get to use about 1/3 or ½ of and then they rot. (Yes, berries are quite expensive here) Once I bought raspberries and they were moldy a day and a half later- seriously? I wish I was exaggerating, but I'm not.  The time it went bad that quickly I had even planned to freeze them so the molding process didn't have time to happen so it was all the more infuriating since I thought I was being so smart. I hope this is just a phenomena that occurs because I live in NM , far away from anyone who would make fresh raspberries. Needless to say I was done with them.

Enter Freeze Dried Raspberries. My oh my these ruby gems are amazing. Depending on if you get a crop that is tart or one that is sweet, they are fantastic. I could snack on them right out of the can, use them in desserts, smoothies, breakfast and my personal favorite, granola.  I bring it to every food demonstration or party I ever attend.  These retail at $33.69, but now for the month of November, these are on sale for online customers for $29.69 and Q customers for28.69. This is unbeatable. When I was thinking about all of the raspberries I've wasted and thrown away, I realized I could have bought a can of these raspberries that last for 25 years sealed and 18 months once opened, and used what I had in the past and still had plenty more to use with any waste, loss of flavor, or even nutrition. Needless to say, I use raspberries more often now!

Alert....Alert.....This is just a Test


Today each of the different medias will be conducting a Nationwide Emergency Test simultaneously.  Please don't be alarmed!  The test will run for 1 minute between the hour of 11-2 depending on where you live and be over before you know it.  I think the idea of a Nationwide Emergency Test is brilliant because if we have things like AmberAlerts and Hurricane Warnings, it is much easier to make sure everyone is on the same page.

Tricks I've learned from using my Sun Oven



Sun Oven Brownie Pans

NO FUEL NECESSARY
The Sun Oven is one of my top 5 favorite emergency items EVER! I love that I don't have to pack fuel for it (as I am currently living in an itty bitty apartment that would outlaw the storing of fuel) and it works anywhere there is Sun, even in the winter!!! It doesn't matter if you have snow on the ground as long as its not a cloudy day. 

BUT HOW DOES THE FOOD TURN OUT?
If you start cooking food when the Sun is first coming up, you can actually cook a few meals within the day as well as heat bricks to keep you warm at night...see below. The Sun Oven keeps food so juicy and warm, unlike the conventional oven which tends to dry thing out, due to the window that traps all of the juices inside. Just a special note that you'll probably want to make sure your pans are covered with lids so all of the condensation doesn't end up on the glass since those little droplets will make it difficult to see the thermometer gauge to see if you are maintaining the correct temperature.

MAKE YOUR OWN DISHES
Something I also did for my sun oven is bought some high heat paint (the kind you use on barbecue grills) and painted a few of my mylar glass jars (*on the outside, not the inside, that would be poisonous :P) in order to let the jar soak up more heat to boil water with greater ease.  I also painted a few bricks, since bricks tend to hang onto heat, that I can put under the tray that holds food so it will help maintain the heat if a cloud were to pass by which would typically make the temperature drop. Since I live in sunny Las Cruces, that tends to be less of a problem so it typically comes in my handy for me when I am getting something out of the oven and putting something new in. The bricks help it not take as much time to reheat to the correct temperature. And, if we were living in a true emergency and didn't have electricity or gas we could fill the Sun Oven with bricks after we were done cooking our meal to trap in all of that heat, then use them to warm our bedrooms (or as I've heard if wrapped in a special type of cloth, you can put at your feet to keep your children's little toesies warm). PS. If you know which type of fabric would be good for this use, you should leave a comment at the bottom because I'm currently trying to plan for that as we are planning on doing a winter campout to test our 4 season tent and stove.

SET IT AND FORGET IT
Another reason I love my Sun Oven is you can kind of set it and forget it. If you are going to be gone for the day but would still love to come home to a hot juicy meal, the makers of the Sun Oven just suggest that you set the Sun Oven facing the area that will get the most sunlight in the day, pop your food in, and come home to a crockpot-esque kind of meal. Because it doesn't dry food out like a conventional oven, it allows you to cook something for hours without burning the food. Also, because the glass traps the heat and pressure, food stays nice and warm for hours even after heavy Sun has gone leaving you able to decide when mealtime will be without having to plan times exactly and precisely. One time I put ears of corn directly on the tray in the morning and forgot about them until about 6 pm. They were still juicy and warm despite the forgetful cook.

I'm sure you get it by now, but I LOVE THE SUN OVEN!!!

OTHER HELPFUL PRODUCTS
If you are just getting started and are noticing that your 9x13 casserole pans won't fit, you should check out the Sun OvenRoasing Pan. Shelf Reliance also sells a brownie pan which can also serve as a cookie sheet or can cook your casserole baked goods with ease.

GLASS DISHES ARE PERFECT
If you can't afford accessories right now, I personally have had a lot of success with my 8x8 Pyrex dishes as they are the correct height that I can stack 1 on top of another and get twice the cooking done. The only problem with this route is that I don't have a lid to trap moisture in so I often get condensation on the top of the glass when I go this route. I know you will love your Sun Oven....I do!

Beans for Dessert? Do the Butter Swap!

If you are someone who doesn't like to buy your beans and can them yourself then, Beans are on a crazy good sale this month!




How many times have I heard, “Well, I don't store beans because I don't like them?” To them I say, I used to be in your boat, but I learned to not only like them, I love them. Taco Soup, Southwestern Chili Beans and "regular" chili. I can name a handful of delectable delightful soups. I also love it in my Mexican foods like burritos, tacos  But what else can you do with beans?

Nutritional go-to tip that I love: You can substitute ½ the butter called for in a recipe for well-mashed beans. If a recipe calls for 1 cup of butter, you would use ½ c (1 stick) of butter and ½ c of mushed white (northern or navy) beans. Note: you can also use pinto, they just have a stronger taste that is a little more difficult to mask or if you are making a chocolate dish like Devil's Food Cake or Brownies you can use black beans...just don't tell the eaters beforehand- or after for that matter- or they will say that they spot the difference in taste.

I first learned this from an LDS (Church of Jesus Christ of Latter-day Saint) online cookbook, but quickly discounted that it must taste horrible so I didn't believe it and didn't give it another thought. Next, odes to Deals to Meals. I have been in love with most of her recipes for a little over 2 years now and saw that she had a cookie recipe that called for beans to which I gawked and said, seriously? She is going to make me put beans in my cookies....blah. I'm cool with switching out applesauce for oil, but she suggested that I put beans in my white chocolate chip oatmeal cookies. I bravely trusted her suggestion and went boldly to my food processer and dumped some beans in thinking of how awful it would taste. I added it to the dough and decided I had to try the dough before I could precede. Yes, I am one of those cookie dough eaters, I'll own up to it. The thing I won't own up to is how much dough I ate! I couldn't believe how bad it didn't taste, no, how amazing it did taste. I was sold. I went forth boldly and began adding this trick into much of my cooking. Tips I've learned: I only do ½ as a substitute. If I were living strictly on food storage, of course I'd be willing to go all in, but I do notice that things are drier if I go all bean-y. Not only is this cheaper (come on, the cost of butter is $3/lb right now!) but it is also tons healthier. Just this one little switch saves you * 665 calories and a whopping 91.5 grams of fat per ½ c substituted in a recipe, not to mention that it adds almost 10 grams of protein and 6 grams of fiber. If your recipe made 2 dozen cookies that would mean you cut the cookies calories down by about 25 calories per cookie and 4 grams of fat.  Is that not the coolest trick to think about?  If you like sweets but need to cut down on your fat intake... there you go!  Now you don't have to fill your freezer with as much butter and that alone should put a smile on your face :P

Out of Sight, Out of Mind

Many people have trouble finding a place to put all of their food, this new product is sure to put a smile on someone's face cuz its already put one on mine.  Introducing the Under the Bed Harvest #10 Rack.

This rotating dream is the same dimension as the standard Harvest that we are used to seeing, its just one level rather than the multiple rows that typically come standard in the other configurations.  This means that it is 24.5" deep and 36" wide.  It has 4 rows which hold 7 cans each making it 28 cans altogether.  So, how many cans can your bed conceal?

If you have a crib, this is a little bit too wide, so it won't fit under there.

If you have a twin or full bed, you will be able to fit 2 sets back to back with one area to fill the shelf being at the head of the bed and one being at the foot of the bed.  This would mean 56 #10 cans!!!  But we're just getting started :P

If you have a queen bed you would be able to fit 4....YES 4 of these under your bed.  That would mean if you had 2 sets of 2 back to back with entries on both of the sides of the bed you would be able to store 112 cans!  How awesome is that.  This means you have the equivalency of a FULL Harvest 72 #10 underneath your bed.  Can I get a woooooohooooooo!

Of course, you probably already guess that a California King and regular King also hold 4 sets with plenty of room to spare.  If that doesn't make you smile...nothin' will!


As you can imagine, two cans stacked on top of one another are pretty high so you will probably need to buy a bed raiser as is pictured above.
